Waikiki Meatballs

Meatballs
- 1 1/2 lbs Ground Turkey
- 2/3 cup Gluten Free Cracker Crumbs Glutino crushed up
- 1/3 cup Minced Onion
- 1 Egg
- 1 1/2 tsp Salt
- 1/4 tsp Ginger
- 1/4 cup Milk
Sauce
- 1 tbsp Butter or shortening
- 2 tbsp Cornstarch
- 1 can Pineapple Tidbits 13.5 oz. (reserve syrup)
- 1/2 cup Brown Sugar (packed)
- 1/3 cup Vinegar
- 1 tbsp Gluten Free Soy Sauce
- 1/3 cup Chopped Green Pepper
Making the Meatballs
Mix the ground turkey, gluten free bread crumbs, onion, egg, salt, ginger, and milk.
Shape mixture into small meatballs (about 1" round).
Melt the butter in large skillet; brown and cook the meatballs. Remove from heat and keep warm.
Making the Sauce
Mix cornstarch and sugar in large bowl.
Stir in reserved pineapple syrup, vinegar, and gluten free soy sauce until smooth.
Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for one minute.
Add meatballs, pineapple tidbits, and green pepper. Heat through and serve over white rice.
