Waikiki Meatballs

Ingredients
  

Meatballs

  • 1 1/2 lbs Ground Turkey
  • 2/3 cup Gluten Free Cracker Crumbs Glutino crushed up
  • 1/3 cup Minced Onion
  • 1 Egg
  • 1 1/2 tsp Salt
  • 1/4 tsp Ginger
  • 1/4 cup Milk

Sauce

  • 1 tbsp Butter or shortening
  • 2 tbsp Cornstarch
  • 1 can Pineapple Tidbits 13.5 oz. (reserve syrup)
  • 1/2 cup Brown Sugar (packed)
  • 1/3 cup Vinegar
  • 1 tbsp Gluten Free Soy Sauce
  • 1/3 cup Chopped Green Pepper

Instructions
 

Making the Meatballs

  • Mix the ground turkey, gluten free bread crumbs, onion, egg, salt, ginger, and milk.
  • Shape mixture into small meatballs (about 1" round).
  • Melt the butter in large skillet; brown and cook the meatballs. Remove from heat and keep warm.

Making the Sauce

  • Mix cornstarch and sugar in large bowl.
  • Stir in reserved pineapple syrup, vinegar, and gluten free soy sauce until smooth.
  • Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for one minute.
  • Add meatballs, pineapple tidbits, and green pepper. Heat through and serve over white rice.
