
Waikiki Meatballs
Great with Basmati Rice for a meal or served in smaller portions as an appetizer
Ingredients
Meatballs
- 1 1/2 lbs Ground Turkey
- 2/3 cup Gluten Free Cracker Crumbs Glutino crushed up
- 1/3 cup Minced Onion
- 1 Egg
- 1 1/2 tsp Salt
- 1/4 tsp Ginger
- 1/4 cup Milk
Sauce
- 1 tbsp Butter or shortening
- 2 tbsp Cornstarch
- 1 can Pineapple Tidbits 13.5 oz. (reserve syrup)
- 1/2 cup Brown Sugar (packed)
- 1/3 cup Vinegar
- 1 tbsp Gluten Free Soy Sauce
- 1/3 cup Chopped Green Pepper
Instructions
Making the Meatballs
- Mix the ground turkey, gluten free bread crumbs, onion, egg, salt, ginger, and milk.
- Shape mixture into small meatballs (about 1" round).
- Melt the butter in large skillet; brown and cook the meatballs. Remove from heat and keep warm.
Making the Sauce
- Mix cornstarch and sugar in large bowl.
- Stir in reserved pineapple syrup, vinegar, and gluten free soy sauce until smooth.
- Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for one minute.
- Add meatballs, pineapple tidbits, and green pepper. Heat through and serve over white rice.
